Memphis BBQ Sauce

Ingredients
  

  • 4 slices Bacon
  • 1 Onion minced
  • 2 Jalapeno Peppers stemmed, seeded, minced
  • 1 tsp Red Pepper Flakes
  • 28 oz Ketchup
  • 1/4 cup Dijon Mustard
  • 1/4 cup Brown Sugar
  • 3 tbsp Honey
  • 1/4 cup Red Wine Vinegar
  • 2 tbsp Apple Cider Vinegar
  • 2 tsp Worshcestershire Sauce
  • 1 tsp each of Salt, Black Pepper, Cayenne pepper
  • 1 Juice of 1 medium lemon

Instructions
 

  • Heat Bacon in a medium sauce pan over medium high heat
  • Cook until 1/3 of fat is rendered, then add onions, render until clear
  • Add remaining ingredients
  • simmer for up to 1 hour.
