Vegetable Soup

Ingredients
  

  • 2 cloves Garlic, minced
  • 2 Carrots, sliced and halved
  • 2 Zucchini, sliced and halved
  • 2 cups Savoy Cabbage, shredded
  • 2 cups Cauliflower florets, halved.
  • 2 cups Broccoli
  • 1 Onion, diced
  • 1 Red pepper, diced
  • 1 Celery stalk, sliced and halved
  • 2 tsp Thyme
  • 6 cups Vegetable broth
  • 2 tsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp lemon juice

Instructions
 

  • Put everything in a large stock pot, simmer for 15-20 minutes.
