Zucchini Bread

Ingredients
  

  • 2 Cups Whole Wheat Flour
  • 2/3 Cup All Purpose Flour
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 tbsp Ground Cinnamon
  • 3 Egg Whites
  • 1 Whole Egg
  • 1 Cup Sugar
  • 2 tsp Vanilla Extract
  • 1/3 Cup Canola Oil
  • 2/3 Cup unsweetened applesauce
  • 2 Cups Zucchini, peeled, grated, and drained.
  • 1/2 Cup Chopped Walnuts

Instructions
 

  • Preheat Oven to 350 Degrees
  • coat 2 8x4 loaf pans with cooking spray
  • Sift together whole wheat flour, all purpose flour, salt, baking soda, baking powder, and cinnamon in a bowl
  • In another bowl beat egg whites until frothy, add egg, sugar, vanilla extract, oil, and applesauce, beat until thoroughly combined, then beat in zucchini.
  • Add dry ingredients to egg mixture and mix well.
  • Fold in Nuts
  • Pour batter in prepared pans
  • bake for 50-60 minutes, until toothpick inserted in middle of loaf comes out clean.
