Ingredients
  • 2 cloved garlic, minced
  • 2 carrots, halved and sliced
  • 2 zucchini, halved and sliced
  • 2 cups savoy cabbage, shredded
  • 2 cups cauliflower florets, halved
  • 2 cups broccoli
  • 1 onion, diced
  • 1 red pepper, diced
  • 1 celery stalk, sliced and halved
  • 2 tsp thyme
  • 6 cups vegetable broth
  • 2 tsp fresh parsley, chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp lemon juice
Instructions
  1. Put everything into a large stock pot and simmer for 15-20 minutes.
